I've spent over a decade in London hospitality — starting on the floor of restaurants, working through bars, ending up as Head of Beverage across four sites.

One thing I kept seeing: independent venues with real character and genuine ambition, but a drinks programme that didn't reflect any of it. Generic lists. Poor GP. No system behind the bar. No one accountable for making it better.
