I've spent 8 years in London hospitality — starting on the floor of restaurants, working through bars, ending up as Head of Beverage across four sites.
One thing I kept seeing: independent venues with real character and genuine ambition, but a drinks programme that didn't reflect any of it. Generic lists. Poor GP. No system behind the bar. No one accountable for making it better.
Sangaree exists to fix that. I work with independent operators to build cocktail menus, batch systems and bar identities that actually run — without you needing to hire a full-time head of drinks.

That nutmeg is the bit that gets us. It's not garnish. It's not decoration. It's the one detail that pulls the whole drink together — the thing only someone who really knows what they're doing would think to add. David Wondrich wrote about it in Imbibe as a drink that professionals knew and civilians didn't. Quiet, considered, no fuss. Just craft.
